THAI PRAWN LAKSA
What you'll need
serves 4 for the soup 1/4 C coconut oil, plus 1 tbs extra 6 eschelots, thinly sliced 600g green king prawns 400ml can coconut milk 1 tbs raw pure honey 2 zucchini, peeled into thin ribbons 2 spring onions, thinly sliced 2 limes cut into wedges, to serve for the laksa paste 2 tbs dried chilli flakes 1 small red onion, chopped 4 garlic cloves, chopped 4 cm piece fresh ginger, peeled, chopped 2 stalks lemongrass, white part only chopped 1/2 C raw macadamias 2 tsp ground coriander 1 tsp ground cumin 1 tsp ground turmeric 1 tsp sweet paprika |
