Banana bread

What you'll need serves 12-16 4 ripe bananas 5 eggs 1 tbs manuka honey or pure maple syrup 2 tsp vanilla extract 1/4 C macadamia oil or melted coconut oil 1/2 tsp cinnamon 1/2 C coconut flour 1/4 C chia seeds 2 tsp baking powder | How to make it In a food processor, combine banana, eggs, honey, vanilla, oil, cinamon and baking powder. When smooth and creamy add coconut flour and chia seeds and mix through. Allow mixture to sit for 10 minutes to allow chia seeds and coconut to expand. Pour evenly into a lined loaf tin and place in a preheated oven at 180 degrees C for 20-25 minutes or until firm and a skewer comes out clean. Portion into 12 slices before serving. |
