Chocolate and walnut truffles
with goji berries and roasted almonds

What you'll need makes 12 2 C walnuts 2 C dates, pitted and soaked for 15 minutes 2/3 C raw cacao powder 2 1/2 tbs goji berries 2 1/2 tbs roasted flaked almonds 1/4 C extra roasted almond, finely chopped for rolling | How to make them Process walnuts and raw cacao until fine crumbs form. Add dates and process again until the mixture comes together as a dough. Gently incorporate goji berries and almonds and roll into bite sized balls. Roll into almonds and freeze for 5 minutes to firm before serving. |
