Salmon with pomegranate and cucumber salsa

What you'll need serves 2 2 salmon fillets 1 C mixed lettuce leaves 1/4 C pomegranate seeds 1/2 cucumber, peeled 2 tbs edible flower petals olive oil, for frying | How to make it Heat a frying pan with oil. Place salmon in hot pan skin side down and fry until golden. Flip and fry for a further 10 minutes or until cooked through to your liking. Meanwhile, toss remaining ingredients and serve with salmon. |
