Orange and dark chocolate cookies
with macadamia oil

What you'll need zest of 1 orange, finely grated 1 C coconut sugar 1/2 C macadamia oil 2 eggs pinch sea salt 3/4 C raw cacao powder 3/4 C almond meal, blanched 1 tsp vanilla essence 1 C chocolate chips | How to make them In a bowl combine zest and sugar. Allow to sit for a few minutes to allow to become aromatic. Add macadamia oil and pulse in a food processor until well combined. Add eggs one at a time to the food processor blending for 1 minute with each addition. Add salt, raw cacao and almond meal and blend until well incorporated and add vanilla essence to the blender once the mixture has thickened. Fold through chocolate chips and refrigerate overnight. Take 1 tablespoon amounts of mixture at a time and roll and flatten into cookie shapes and place on a line baking tray. Bake for 10-12 minutes at 180 degrees C. |
