Baked salmon
with orange and mint syrup

What you'll need serves 4 4 salmon fillets 2 oranges, peeled and juiced 3 garlic cloves 2 C rocket 1/2 C mint leaves | How to make it Place salmon fillets on a lined baking tray and cook for 10 minutes at 180 degrees C. Meanwhile, place garlic cloves and orange peel thinly sliced in a saucepan over medium heat. Cook stirring for a minute or so until aromatic. Add orange juice and mint and turn heat up to high bringing to the boil. Reduce heat and simmer until salmon is cooked. Place salmon on rocket beds and top with rind, mint leaves and drizzle over orange syrup. |
