Pumpkin scones

What you'll need serves 12 1 C smashed roasted pumpkin 3 C almond meal 1/2 C raisins 1/2 tsp cinnamon 2 tsp baking powder 60g coconut oil, melted or macadamia oil 1 tbs manuka honey or pure maple syrup 1 C oats, to coat (optional) | How to make them Combine all dry ingredients together in a large mixing bowl. Combine honey, oil and pumpkin in a separate bowl. Combine the two mixtures well. Divide mixture into 9 balls and flatten slightly to resample a scone. Roll in oats (skip oats for gluten fee and completely paleo version) and place on a lined baking tray. Place in a preheated oven at 180 degrees C and bake for 20 minutes or until firm and golden brown. |
